Simple stir fried tuna with rice

This is an easy, quick and inexpensive wok meal which is really tasty and a family favourite in our house! It's also a great way to use up any leftover rice.


  • 1 x 425gms tin of tuna in oil
  • 1 500gm packet of bacon - I usually use a trim middle cut, rind removed and diced
  • 250gms long grain rice - I cheat and use two packets of "boil in the bag"!
  • 2 tablespoons olive oil
  • 1 large or two small onions finely diced
  • 1/2 teaspoon minced chilli....more if you like your food with a bit of chilli
  • 1 bunch of spring onions, finely sliced
  • 1 large red capsicum, coarsely diced
  • 2 tablespoons of light soy
  • 1 cup of frozen peas


  1. Cook rice until cooked, then drain and set aside
  2. Heat half the oil in a wok on high heat, add the bacon and fry until crisp - remove and drain on handee towel
  3. Add the remaining oil to the wok on low heat , add the onion and chilli and cook for approx. three minutes/ until the onion is translucent
  4. Add back the bacon and rice to the wok, turn up heat to high and toss/ stir - fry
  5. Add the soy and tuna (drained), breaking up the tuna and stir-fry
  6. Add the spring onion and capsicum and stir-fry for a short time, tossing through with the other ingredients
  7. Finally add the frozen peas and quickly cook through

Taste and check seasoning - add more soy if required

Don't overcook this dish especially once the vegetables have been added as you want the dish to remain fresh and crisp
